This wonderful coffee from Ashtok Patre is heavenly. Ashtok is a third generation coffee producer from Ratnagiri Estate in Southern India. His grandfather, Patre K Shivappaiya established the farm in 1927, when the land was mostly jungle and began planting coffee seeds two years later with the first harvest taking place in 1934. Located in the richly biodiverse Western Ghats of South India, Ratnagiri is part of a tiger reserve and home to over 48 recorded bird populations, monkeys, leopards, wild boar, mongoose and - on occasion - elephants.
Ratnagiri Estate is committed to pushing the boundaries of Indian specialty coffee through innovation and sustainability. Quarterly soil tests guide organic corrections, while ionic seawater and seaweed extract are used to enhance plant immunity and
elevate the sugar levels in the coffee cherries. Their state-of-the-art facilities include a bioprocessing unit, an ozonator, a temperature- and humidity-controlled drying chamber, a microbiology lab, and a cupping room—each designed to ensure quality protocols at every stage.
This coffee was de-skinned and anaerobically fermented in grain pro bags in two 12 hour stages and then dried on raised beds. We love coffees like this. Roasted for drip/pourover.

Roasted pretty light to bring out the acidity notes this coffee was processed for. Perfect for drip/pourover (but you could of course pull modern shots/soup/turbo/etc).
