Cognito Coffee Roasters' Yanahuaya - Caranavi, Bolivia
Bolivia's production is very small but coffees from this region are generally excellent quality and this is one of them. This very limited (and delicious) offering comes from producer Pedro Yanahuaya of San Antonio de Bolinda. It's comprised of two varietals: Typica and Catuai, grown at 1460m, washed process, and dried on open beds for 15 days. It's bright and semi-sweet with notes of apple, roasted almond, cinnamon, dark chocolate. Cognito omni-roast this one for both espresso and drip/Aeropress/V60/etc.
